Protein consumption

I was fascinated to read about the importance of enough protein, and especially the front-end loading of it in the day. I have a hard time getting enough protein that my body doesn't react to, as I have sensitivities to dairy, egg whites, and legumes. I am trying the low histamine diet so that means no nuts. Are there any suggestions for getting more protein into my diet without getting tired of chicken and salmon (we limit red meat due to cholesterol). Thanks!
